Vegan Banana Oat Pancakes

It's no secret that breakfast is my favourite meal of the day, and what better way is there to get your morning off to a great start than with a nice big pile of vegan pancakes. My recipe uses oats instead of flour, banana instead of eggs, and plant-based milk instead of dairy milk to make the most delicious, nutritious vegan whole-food pancakes.

These pancakes are 100% plant-based, containing absolutely no milk or eggs. Unlike traditional pancakes, this recipe also doesn't contain any flour (don't worry, flour is vegan), instead I have used blended oats for a more nutritious and filling pancake. Combined with banana and coconut milk, this makes for a more moist final product that is every bit as delicious as an original pancake.

If you like quick no-fuss meals this recipe is definitely for you. These pancakes are so simple to make, all you have to do is throw everything in a blender then cook until brown, easy enough right? They can then be topped with whatever you are in the mood for, today I fancied peanut butter, chocolate sauce, and some fresh fruit.

Vegan Banana Oat Pancakes

Prep time: 2 minutes

Cooking time: 6 minutes

Total time: 8 minutes

Servings: 6 pancakes


Ingredients

  • 50g rolled oats

  • 1 medium banana

  • 60ml plant-based milk

  • 1 tsp baking powder

  • Pinch of salt

  • Optional add-ins - Dark chocolate chips, blueberries, applesauce & cinnamon, nuts


Instructions

  1. Heat a frying pan over a medium heat with a little oil.

  2. Place all the ingredients in a blender and blend to form a smooth batter.

  3. Pour the batter into the heated frying pan to form 6 pancakes, you may need to do this in batches depending on how large your pan is.

  4. After 2-3 minutes, or when the edges are golden brown and small bubbles have started to appear on the surface, carefully flip each pancake over and cook for a further 2-3 minutes.

  5. Serve with your favourite toppings.


Notes

  • If you're feeling creative you can include any add-ins you fancy (see ingredients for examples).

  • This recipe can be made gluten free if you use gluten free oats.

  • These pancakes are also delicious as a savoury American breakfast, combined with scrambled tofu, hash browns and vegan bacon.

  • You can make a big batch ahead of time and reheat them in the toaster or your microwave.
