The thought of a delicious breakfast definitely helps get me out of bed in the morning. Porridge is usually my go-to breakfast - I tend to eat it most mornings because it is so quick to make, super filling, and tastes delicious. Here is my recipe for the perfect winter porridge, with warming spices perfect for the colder months.

Porridge is well known for being a nutritious and healthy breakfast choice, being both high in soluble fibre and rich in antioxidants. It's a healthy meal you'll actually want to eat every day! I personally love to make porridge with coconut milk (my favourite milk) for the sweet flavour but porridge works well with all plant milks, and even water (although it won't be as creamy).

Being healthy doesn't mean porridge has to be boring. I love to get creative with my porridge toppings and the ones I use in this recipe perfectly complement the winter spices. Other great toppings include mixed berries, dark chocolate or a big spoonful of your favourite nut butter.

Winter Spiced Porridge
Prep time: 5 minutes
Cooking time: 5 minutes
Total time: 10 minutes

Ingredients
For the Porridge
50g oats
350ml plant based milk (e.g. oat, coconut, almond) or water
1 tsp mixed spice
1/2 tsp cinnamon
1/2 tsp ginger
Topping (optional but recommended)
1/2 banana
Handful pomegranate seeds
5 walnuts
Handful coconut flakes
Pinch cinnamon
Instructions
Combine the oats and milk in a saucepan, and bring to a boil.
Reduce the heat to a simmer for around 5 minutes until the porridge is thick and creamy.
Remove from the heat and stir in the spices.
Pour the porridge into a bowl, top as desired and serve immediately.

Notes
This recipe can also be made in the microwave if you are short of time. Put the oats and milk in a heatproof bowl at at 800W for 3 minutes.
The spices can be adjusted according to taste.
Other great toppings include mixed berries, chocolate and nut butter.
