Vegan Apple Cinnamon Protein Waffles

I've been experimenting with different variations for protein waffles and these apple cinnamon waffles have to be one of my favourite comforting flavours. Here is my recipe for delicious apple cinnamon vegan protein waffles, topped with cinnamon syrup and cooked apple slices.

I like to keep my protein intake fairly high to help with muscle gain and repair and have luckily not found hitting my protein targets much of a struggle since going vegan. These waffles are made using apple cinnamon flavoured protein powder from The Protein Works and for a stack of these waffles you have more than 30g of complete plant-based protein to help fuel your body for whatever the day brings your way.

To top these waffles I like to use a cinnamon syrup from Sweet Freedom to add a little extra sweetness. I also love to make soft cinnamon apple slices which pair perfectly with the waffle flavour. They are so simple to make and can be made whilst the waffles are cooking in the waffle maker - They are made by coating the slices in sugar and cinnamon and gently pan frying until soft, so easy!

Vegan Apple Cinnamon Protein Waffles

Prep time: 2 minutes

Cooking time: 4 minutes

Total time: 6 minutes

Servings: 4 waffles


Ingredients

  • 70g plain flour

  • 30g vegan apple cinnamon protein powder

  • 1 tbsp sugar or sweetener powder

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1/2 tsp vanilla extract

  • Pinch of salt

  • Plant-based milk - Approx 180ml + extra as required

  • Apple slices - 1 red apple, 2 tsp cinnamon, 2 tsp brown sugar


Instructions

  1. Turn your waffle iron on to preheat.

  2. Add all the dry ingredients into a jug and mix well.

  3. Add the vanilla extract and pitaya powder, then gradually add in the vegan milk to form a smooth thick batter.

  4. Spoon the waffle mixture into the preheated iron and cook until crisp and golden, approximately 3-4 minutes (depending on your brand of waffle iron).

  5. For the apple slices, slice your apples and mix with the cinnamon and brown sugar, cook in a frying pan over a medium heat until softened and golden.

  6. Serve the waffles with your apple slices, and any desired extras.


Notes

  • This recipe can be made gluten free if you use gluten free flour.
