Being totally honest for most of my life I have definitely been more of a pancake kind of person, but after recently getting a waffle iron it is safe to say I am now obsessed! Here is my recipe for easy vegan waffles that are the perfect way to start your day off the right way.
It took a fair amount of trial and error to make the perfect waffles that were not only delicious, but also have the perfect crisp golden outer. Many times I made the batter the wrong consistency, under/over filled the iron, cooked for the wrong amount of time, but after a many attempts I gradually made the perfect waffle recipe that makes perfect waffles every time!
When developing this recipe I wanted to make these the perfect 'everyday' waffles that would go great with any toppings. My favourite way to top these waffles is with some fresh fruit, depending on what I have in the house, and a load of sweet syrup.
Prep time: 2 minutes
Cooking time: 4 minutes
Total time: 6 minutes
Servings: 4 waffles
200g self-raising flour
1 tbsp sugar or sweetener powder
1 tsp baking powder
1/2 tsp vanilla extract
Pinch of salt
Vegan milk - Approx 350ml + extra as required
Turn your waffle iron on to preheat.
Add all the dry ingredients into a jug and mix well.
Add the vanilla extract, then gradually add in the vegan milk to form a smooth thick batter.
Spoon the waffle mixture into the preheated iron and cook until crisp and golden, approximately 3-4 minutes (depending on your brand of waffle iron).
Serve with your favourite toppings.

These pancakes are also delicious as a savoury breakfast, combined vegan bacon.
