In the midst of summer, I have been looking for meals that are satisfying without feeling too hot and heavy, and this is the perfect dish. Served for one, or as a sharing platter for two, these wraps are light, refreshing, and nutritious, everything you could want in the summer heat.
There are so many different fillings you can include in these wraps. I typically like to include a range of raw vegetables (depending on what I have in my fridge) with a vegan protein source. For this recipe I used vegan soy pieces, (Naked Glory Roast Tenderstrips), other great alternatives include tofu, tempeh, and mushrooms.
My favourite part about this dish is the delicious peanut satay sauce. This sauce is so versatile and I use it in so many of my recipes, whether they are salads, stir-fries, or buddha bowls. It is so quick and simple to make, after tasting it you'll want it with every meal!
Satay Vegan Lettuce Wraps
Prep time: 10 minutes
Cooking time: 10 minutes
Total time: 20 minutes
Servings: 1-2
Ingredients
For the Wraps:
1/2 head of lettuce
1 carrot
1/2 cucumber
2 tomatoes
2 spring onions
100g vegan soy/seitan pieces (or alternative of choice)
For the Satay Sauce:
2 tbsp smooth peanut butter
1 tbsp light soy sauce
1/2 tbsp lime juice
1/2 tsp sriracha hot sauce (optional)
1/2 tsp garlic powder
1/2 tsp ground ginger
Instructions
Cook the vegan soy pieces according to instructions on the packet.
Carefully remove the lettuce leaves from the head, and slice the vegetables into thin strips.
In a jug, mix all the ingredients for the satay sauce together until smooth, if it is a bit too thick you can add a little water to thin it out.
Divide the vegetables, soy/seitan pieces, and sauce between the lettuce leaves, or serve on a board as a 'make-your-own' style meal.
Notes
My favourite vegan soy pieces are - Naked Glory Tenderstrips, Vivera Plant Chicken Pieces, The Vegetarian Butcher No Chicken Chunks, and THIS Isn't Chicken
Alternatively, other plant-based meat substitutes include - Tofu, Tempeh, and mushrooms.
Other delicious sauces you could use for these wraps are hoisin, bbq, and sweet chilli.
