I am definitely another one of your 'stereotypical granola-eating hippies' and not ashamed of it! No breakfast bowl is complete without a sprinkle of delicious homemade granola, here is my recipe that I have gradually adapted over the years to make the ultimate vegan granola.
Granola is something I have eaten for years, even in my pre-vegan days. I mostly used to buy it from the supermarket, which can not only be very expensive, but it is also harder to find vegan-friendly versions as many contain honey. Even though there are some great vegan granola options available in most supermarkets, most often I like to make my own as it is suprisingly simple and I can flavour to my taste.
I always like to keep a large jar of my granola in the kitchen so I can add a sprinkle to my food as I feel like it. Some of my favourite ways to eat granola are in smoothie bowls like my chocolate smoothie bowl, on top of some delicious dairy-free yoghurt, or in a bowl with some vegan milk!
Vegan Granola
Prep time: 5 minutes
Cooking time: 25 minutes
Total time: 30 minutes
Servings: 25
Ingredients
200g rolled oats
30g coconut oil (or other oil of choice)
15g nut butter
75ml maple syrup
15g flaked almonds
1-2 tsp cinnamon
1 tsp salt
Instructions
Heat your oven to 180°C (or 160°C for fan), and line a large baking tray with baking paper.
Pour the oats into a large mixing bowl.
Melt the coconut oil in a pan or a microwave jug until liquid, stir in the nut butter and maple syrup until combined.
Add the almonds, cinnamon, and salt to the oats, pour over the oil mixture, and stir until all the oats are well coated.
Spread the oats out into a thin layer on the baking tray and press down firmly (this helps form more granola 'clumps').
Bake in the over for 20-25 minutes, half way through I'd recommend giving the granola a little mix so it evenly browns.
Remove the tray from the oven and allow to full cool.
Once cool you can add in any additional extras such as chocolate chips or dried fruit!
Notes
Store in a sealed container at room temperature for 2 weeks
This granola can easily be made gluten-free by substituting the oats for gluten-free oats.
If you have a nut allergy you can swap out the nut butter for more liquid (syrup/oil) and leave out the almonds.
