Banana Berry Smoothie Bowl

Smoothie bowls are one of my favourite snacks, they are perfect at any time of day from a nutritious breakfast to a healthy movie snack. There are so many different variations and one of my favourites definitely has to be a simple combination of banana and strawberries. Here is my recipe for a deliciously creamy banana berry smoothie bowl.

Smoothie bowls are a trend that have been around for a while, and I hope they are here to stay! They are basically a smoothie in a bowl (kind of obvious) but I like to have mine a little thicker than I would a drink, making for a deliciously creamy treat.

A part of what makes smoothie bowls so great is their super pretty topping designs, it's a great chance to get creative. There are so many stunning designs all over the internet, ranging from extravagant exotic fruits, to more simple toppings such as this. To finish off this bowl I topped it with some freshly chopped bananas and strawberries, and sprinkled with desiccated coconut and chia seeds.

Total time: 5 minutes

Ingredients

  • 2 medium bananas, frozen

  • 5 strawberries

  • 150ml plant-based milk

  • 15g vegan vanilla or strawberry protein (optional for added protein)

  • 1/2 tsp xanthan gum (optional for thickness)

  • Toppings - Banana, strawberry, desiccated coconut, chia seeds

 

Instructions

  1. Chop your bananas and place in the freezer overnight.

  2. Add the frozen banana chunks to a blender along with the strawberries and plant-based milk (I use coconut), protein powder and xanthan gum (if using), and blend until smooth. You can add additional milk depending on how thick you want your smoothie bowl to be.

  3. Serve immediately in a bowl with your desired toppings.

Notes

  • I tend to keep a rather large store of bananas in my freezer so I can make a smoothie bowl whenever I fancy, which tends to be most days...

  • For a kick of protein, add a scoop of your favourite vegan protein powder - For this recipe I'd recommend either a vanilla or strawberry protein.

  • Other great toppings include granola, chopped nuts, and cacao nibs.
