There are so many different ways to make smoothie bowls which is why I love them so much, but you can't beat a classic banana smoothie bowl topped with a load of fresh fruit. Here is my recipe for a classic vegan banana smoothie bowl.
Smoothie bowls are one of my go-to snacks. The way they differentiate from a regular smoothie is they are typically much thicker so are best eaten out of a bowl with a spoon. All you need is a blender, along with some frozen bananas and plant-based milk, and you are good to go.
My favourite part about making smoothie bowls is decorating them and making them look pretty, only to eat them a few seconds later! Every one of my smoothie bowls looks totally different depending on what fresh fruit and other items I have in my house at the time. For this bowl I have topped it with strawberries, kiwi, chocolate granola, and flaked coconut.
Banana Smoothie Bowl
Total time: 5 minutes
2 medium bananas, frozen
150ml plant-based milk
15g vegan vanilla protein (optional for added protein)
1/2 tsp xanthan gum (optional for thickness)
Toppings - Strawberries, kiwi, granola, coconut flakes
Chop your bananas and place in the freezer overnight.
Add the frozen banana chunks to a blender along with the plant-based milk (I use coconut), protein powder and xanthan gum (if using), and blend until smooth. You can add additional milk depending on how thick you want your smoothie bowl to be.
Serve in a bowl with your desired toppings.
I tend to keep a rather large store of bananas in my freezer so I can make a smoothie bowl whenever I fancy, which tends to be most days...
For a kick of protein, add a scoop of your favourite vegan protein powder - For this recipe, I'd recommend a vanilla protein.
